I want to own and operate a bar with just my girlfriend and myself. We both have 8 years in upscale restaurants and bars, plus fast food and other hospitality/people person establishments like hotels and schools. We are tired of watching ego driven, money hungry owners run their companies into the ground and drive the good people out of the industry. We want to do it our way on our terms the way we design it. We would hope to grow and give the good people a reason to stay in this field. The concept is really great because my OCD is a super power when it comes to micro movements and efficiency. I’ve lost a lot of sleep on these designs and I’ve managed to blend upscale techniques, quality, and recipes with a food hall service style, the local pub’s atmosphere, and nostalgic menu items like ice cream floats. Imagine a real egg white whiskey sour that’s hand emulsified, made with fresh to order lemon juice. Imagine house-made meatballs, house-made red sauce, fresh, locally baked bread, and house-made seasoned olive oil. Imagine darts, pool tables, and board games. Imagine the happiest people in the world sharing the culmination of their experiences with you because they’re the good people that love this industry. We’re seeing less and less of them because they refuse to be treated like pawns. We want them back because they’re the reason this industry exists. They show us that being able to share your space and your resources should be enjoyed because it fortifies your soul, not because a smile gets you a bigger tip.
